What Makes Pizza Expo Different to Build For
Live cooking is central and it is the most demanding build requirement at any Las Vegas food show. Ovens on the floor mean high electrical or gas load, ventilation and heat management, fire-safety clearance, health-compliant preparation surfaces, hand-wash provision, refrigeration and waste handling. Every one of these is an advance-order item with a hard deadline and every one needs designing in rather than adding on.
Sampling creates queues and the queue is your problem. A hot pizza sample generates a genuine line. Position sampling so that line forms inside your footprint rather than in the aisle, or the show will ask you to fix it mid-event.
The audience is overwhelmingly independent operators. These are owner-operators spending their own money, and they respond to practical demonstration and straight answers rather than corporate polish. A booth that feels approachable outperforms one that feels corporate.
Equipment is heavy and hot. Deck and conveyor ovens carry weight and heat. Floor loading, clearance and heat management all need planning.
Ingredient exhibitors compete against cooking exhibitors for attention, which means sampling and demonstration matter even for a flour or cheese supplier.
Pizza Expo Venue and Move-In
Pizza Expo is held at the Las Vegas Convention Center. Cooking equipment requires electrical or gas service, ventilation consideration and fire-safety clearance, all ordered and approved in advance through the official contractor and the venue.
Equipment delivery is coordinated separately from booth freight. Refrigeration needs power from move-in rather than from show open.
Booth Sizes That Work at Pizza Expo
10x10 and 10x20 — Common for ingredients, packaging, POS and services. Sampling is still viable at this size with careful queue planning.
20x20 island — The minimum for live cooking with an oven, prep area, sampling position and safe clearance.
20x40 and larger — Full demonstration kitchen, multiple equipment positions, seated operator meeting space and substantial refrigerated storage.
How Early to Book for Pizza Expo
Four to six months. Cooking equipment, ventilation, fire clearance and utility ordering all extend the timeline well beyond a standard build.
